My husband flipped over this incredibly simple summer salad. It came as a result of having no lettuce or leafy greens in the house, so I improvised. It is very pretty, too! Feel free to vary the spiciness. We prefer all organic veggies, and, recommend that, if possible, you use them as well.

This will serve two.

One ripe but not mushy or brown avocado peeled and cut into cubes. It should be firmish-softish.

One cup of sweet, small cherry tomatoes. Or one medium ripe tomato chopped. The fresher the better.

One cup of roasted corn. Trader Joe’s has delicious frozen roasted corn that thaws easily.

One-quarter cup toasted pistachio nuts

Juice of one lime

One teaspoon of apple cider vinegar

One pinch of sea salt

One-quarter teaspoon powdered chili

A few thinly sliced rings of red onion

One-quarter cup of olive oil, or if you can find it, chili-infused olive oil (Sold at Farmer’s Markets and specialty stores)

Mix everything in an attractive bowl and serve immediately. Garnish with fresh cilantro. Get ready for a party in your mouth!
