turkey bacon eggMy mantra lately has been simple, nutritious, quick, and delicious. I am shocked when I read these articles by moms who promote “wholesome breakfast for the whole family” and the ingredients are junk. If I had a mission, it would be to raise up the standards we accept for what is pro-health and what is not. This one is a winner. I am reading, no make that devouring, David Perlmutter’s Grain Brain, which I just promoted on Facebook. I am definitely “upping” my proteins (not as in a high protein diet, which is not what Dr. Perlmutter describes, but as in ratio to carbs). This treasure of a dish meets the criteria for heart health, brain longevity, and level blood glucose levels, meaning it won’t spike your blood sugar. (These are essential to feeling great and looking great.)

This dish takes about five minutes to prepare. Is that fast enough for you

To serve four:
Pre-heat your oven to 375 degrees
Ingredients:

One package of uncured, all natural, no nitries turkey bacon

Four egges

One avocado peeled and cut in chunks

About 4 ounces (1/2 package) of cheddar, Jack, or your cheese of choice.

A tiny bit of butter or coconut oil.

Get out your muffin pan. Put about one teaspoon of the oil or butter in the bottom of the pan. Lay?the turkey bacon around the sides of the pan. Crack one egg in the middle without breaking it. Shred a little cheese, or place a few cubes of cheese over the egg. Bake for approximately 20 – 25 minutes or until the bacon is a bit crisp and the egg is cooked. The yellow will be firm, not runny.

Scoop from the plate with the whole thing in tact. Put some chunks of avocado on top and serve.

We have a favorite saying in our household. This is guest worthy! My son, Forest, is not an experienced chef, but he is creative and into trying new recipes. He served my husband and me this for lunch today. It is a “party in your mouth” dish.
