2015-06-24 19.21.14This gorgeous dish came as a result of my typing chicken and blueberries in the Google search bar. I am about to reveal a secret for anyone who is an aspiring cook. If you want to have more fun, be more confident, and make fantastic dishes, I suggest that you go to the great recipe book in the sky — the Internet.

Here is a short list of some ingredients I have found recipes for simply by typing in the items I wanted to cook with:

  1. Salmon, spinach, mushrooms, artichokes. (You are not limited to just two ingredients.)
  2. Quinoa, beets, onions
  3. Tofu,?veggie pulp, onions
  4. Peanut butter, cooked quinoa, chia seeds

Really, there is no limit. I had never cooked with blueberries and chicken together before. And I had fresh organic chicken and fresh organic blueberries in my fridge, so I was curious. This dish was simple to make, gorgeous to look at, met all of my standards for nutrition, and was mouth-wateringly delicious. If you try this, just know that I halved the maple syrup, just because I tend to do that. It was plenty sweet.

One great story. My husband and I started making fresh juice. It is utterly divine. But we had all this veggie pulp, something I had never cooked with. I thought, gee, how about if I scramble it with some eggs

It was fantastic. I thought I had invented this. Turns out I was actually late to the party. I went to the great recipe book in the sky and found countless creative and simple recipes using veggie pulp. Who knew?!

Have fun and be creative. Isn’t it nice to know that you can select beautiful food at your local market, or even better, your local Farmer’s Market, knowing that the great recipe book in the sky will always come through for you
